Salt Lake's Sour Cream Chicken

This is recipe I discovered while eating with my Grandma Mary and Aunt Sarah. The family was out of town and I was invited to dine with them one Sunday It became a wonderful addition to our family's parties and has been passed down to my daughters and grandsons. Chicken breast, sour cream, butter and seasoning salt make the base of a great marinade.
Ingredients
  • 8 Chicken Breast Halves
  • 1 pint (16 oz.) Sour Cream (Low fat may be used)
  • 2 1/2 TBL Lemon Juice
  • 1 1/4 to 1 1/2 tsp (to taste) Salt
  • 1 1/4 to 1 1/2 tsp (to taste) Season Salt (We used Lawry's)
  • 2 tsp Paprika
  • 2 tsp Garlic Salt
  • 1 cup Bread Crumbs (very fine)
  • 1/4 pound (1 Stick) Butter-REAL (melted)
Instructions
Combine sour cream, lemon juice, season salt, salt, paprika and garlic salt. Dip chicken into mixture, using all of the mixture. Place chicken in a single layer in a glass baking dish (NO ALUMINUM). Cover with foil and place in refrigerator over night or LONGER! Before baking, sprinkle crumbs over entire dish then drizzle melted butter over crumbs. Cover anew and place in preheated 350° oven for 1 hour. Remove from oven, remove foil, replace in oven for 30 minutes more to brown the bread crumbs. Check for doneness. Remove and serve. Take drippings and serve over baked or mashed potatoes, rice or even cooked eggs and hash browns

Earl & "Turkey" Eat Crown Burgers - A Review

No automatic alt text available.Went Crown Burger tonight...it was great! I Had the Crown Burger,  and "Turkey" (a.k.a. my wife) had the Crown Burger Jr. 

The burger was tasty but the pastrami was awesome! They use shredded lettuce, which I don't think is right for hamburgers, but several have told me they like their lettuce shredded.

It's in the higher mid-range but worth every penny!

By the numbers:
Burger: 🍔🍔🍔🍔(would have been 5 with better lettuce).
Cheese: 🧀🧀(American)
Price:$$$$ (a bit pricey but matches the taste & quality


Conclusion:
Our burgers didn't need anything else, there was ample food! In fact Laurie could only get through half of her Jr...so I sacrificed!

Earl Cooks Dippin' Eggs with Smoked Sausage

Ingredients
  • Large Eggs (2)
  • Butter or Non-Stick Pan Spray
  • Pepper & Salt (to taste)
  • 2 Tbl Water
Instructions
  1. Heat NON-STICK frying pan (skillet) to to medium/medium high
  2. Drop in butter (1 tsp) or spray with pan spray (allow butter to melt)
  3. Crack eggs and gently add to pan
  4. Add water 
  5. Cover immediately I prefer a glass lid, but it must SEAL the steam in
  6. Cook until the white is set on top of the egg, keeping the yolk runny
  7. REMOVE FROM HEAT AND PAN to prevent over cooking.
  Dip with bacon, sausage or toast, or use to top Hash Browns or Corned Beef Hash!

Noosa Raspberry Habanero Yogurt

At the recommendation of a co-worker, I tried this flavor, which will seem odd to some and exciting to others. Here ar my thoughts:
  • As a starting point, I tasted the base yogurt. It was rich and creamy and is sold in an 8 oz. cup. If you don't like fruit-on-the-bottom style yogurts (like my lovely wife), this is not for you. I love my yogurt that way. The base yogurt is very good.
  • The raspberry-habanero is tasty and somewhat mild when blended in with the yogurt, but if you don't like heat, this is not for you. I found myself taking frequent gulps from my glass of milk as I ate.
  • At $2 per 8 oz. container, this is not cheap, but about the same as premium Greek yogurts.
  • Summary: I liked it. I will buy it again and am anxious to try their other, somewhat exotic flavors.

Winger's "Fowl Cow" Burger (it's a meal really)

I Went with my Grandsons to Wingers' this afternoon to try their new Burgers. THEY ARE THE BEST WE HAVE EVER TASTED!
Fowl Cow Burger (a House Specialty) is Fresh ground chuck, a juicy chicken breast, sharp cheddar and pepper jack cheese, mayo, applewood smoked bacon, and topped with a fried egg! The Porker (Burger, Pork, Bacon, Cheddar) was very good too, but Fowl Cow...Freaking Amazing!

Earl Cooks Chicken Marsala over Potatoes with Asparagus - A Review

I will admit right now that this is not a from scratch recipe. It is however a great way to raise a frozen product to a higher level and make it worth eating.

Chicken Marsala requires something we don't use - alcohol. This was on sale and seemed like a good way to try a classic dish with a twist. NO pasta or rice, I am going for mashed potatoes. I love the ingredients - mushrooms and chicken in a sauce that make s great gravy!

Add to that the perfectly steamed asparagus loaded with butter and meat and potatoes take on a new meaning! I used the Smart Ones® brand for ours, but there are quality products from a variety of sources. 

To make it quick I even used packaged mashed potatoes from Idahoan®, my favorite and great for a weeknight side...even though it's not a side, it's an under🤣.

I only did this once, because variety is the spice of life, but I would gladly eat it again, and I ate another brand later.
