Earl Cooks Light Leek Soup-from mixes

Some nights, you just don't have time for cooking a big, heavy meal. Last night was such a night. What I did is combine 2 of my favorite packaged ingredients into a light, almost vegetarian meal.
I started with a product I always have on hand for just such meals, Idahoan Sour Cream & Chive Mashed potatoes.
I made a packet of them per package instruction on the stove top,
When I completed that task, I added about 1 cup of WHOLE milk.

Then came the star of the show Knorr Leek Soup Mix! What you say, 2 mixes in 1 recipe? You bet! And you'll see why...

I then added 2 cups chicken stock to the mashed potatoes, heated through and added the Leek Soup Mix.

After allowing it to combine, heat and thicken properly, I added fresh ground pepper  and 2 TBL REAL BUTTER, and served

I topped mine with Club Crackers, my wife with Ritz.
